How to Make Peanut Butter Haystack Nest Cookies

- Haystacks can be stored in an airtight container. If you plan to stack them you may want to separate with wax or parchment paper.

Butterscotch Haystack Nests
Adorable Easter haystack nest cookies with delicious peanut butter and butterscotch flavors!
Servings 12
Ingredients
- 11 ounce bag of butterscotch chips
- ½ cup of creamy peanut butter
- 6 ounce bag of chow mein noodles
- 9 ounce bag of Whoppers Robin Eggs candy
Instructions
- Line a muffin tin with cupcake holders and set it aside.
- Then melt 1 bag of butterscotch chips and ½ cup of peanut butter in the microwave on high for 1 minute. Remove and start to stir with a rubber spatula for about 1 minute. The hot peanut butter will melt the butterscotch chips in the stirring process. Heat in additional 30 second increments if necessary but be careful not to burn the mixture. It should be smooth, creamy, and completely melted.
- Then, a little at a time gently fold in 1 bag of chow mein noodles using a rubber spatula. Ensure all the noodles are covered with the butterscotch and peanut butter mixture.
- Next, spoon ¼ cup of the coated noodles into each muffin cup. Gently press 2 robin’s eggs in the center of each nest ensuring not to break or crush the noodles. Once assembled, refrigerate the Easter Haystacks for 1 hour to allow them to firm up and harden.
- After an hour, remove them from the refrigerator. Then carefully remove each haystack using the muffin liners.
- Serve and enjoy!
Notes
If you do not have a muffin tin available you can pile the noodle mixture onto a wax paper-lined baking sheet. Spacing them evenly so as not to touch.
