Ingredients in Instant Pot Loaded Potato Soup
- gold potatoes
- yellow onion
- bacon
- celery
- carrots
- garlic
- chicken broth
- Sour cream
- Colby Jack Cheese
- heavy cream
How to Make Instant Pot Potato Soup
Peel the Potatoes, and carrots, and chop the potatoes and slice the carrots. Wash the celery, trim the ends, and slice.
Turn the Instant Pot on ‘SAUTE’, and place the strips of bacon in the Instant Pot, and cook until completely done.
Add the chopped onion, and continue to cook until onion browns. Add the Potatoes, carrots, celery, garlic, and chicken broth, and enough water to cover vegetables, not exceeding the MAX fill line on the Instant Pot.
Turn off the Saute setting, stir the soup, and place the lid on the Instant Pot, and make sure the pressure valve is set to ‘SEALING’. Press the MANUAL setting and set the time to 10 minutes. When the Instant Pot is done cooking the soup, it will beep and go to OFF.
Do a quick release, by carefully turning the pressure valve from SEALING to VENTING, and allow the pressure to release. When all pressure has been released, make sure the FLOAT VALVE is down (see your instruction manual if you don’t know where the float valve is on your Instant Pot), and remove the lid to the Instant Pot.
Blend the Soup
Stir the soup, and either with a potato masher, or immersion blender, blend all the vegetables together into the soup, until it’s smooth.
Add the heavy cream, and stir well.
Place soup in bowls, top with sour cream, shredded cheese, and any other favorite toppings, and serve at once. Enjoy!

Ingredients
- 2 – 3 pounds gold potatoes peeled and chopped
- 1 large yellow onion chopped
