What ingredients do I need to make potato candy?

  • Plain mashed potatoes
  • Salted butter
  • Powdered sugar
  • Vanilla extract
  • Creamy peanut butter

How to Make Potato Candy

First things first, you’re going to need some plain mashed potatoes – just your regular, peeled, and boiled russet potatoes mashed until they’re silky smooth. Now, in a large bowl, combine those mashed potatoes with some butter, vanilla, and a cup of powdered sugar. Mix it all up with an electric mixer until it’s just combined. Then, add in the remaining powdered sugar, one cup at a time, until you get a dough that’s not sticky and has a playdoh-like consistency. Easy peasy!

Cover that dough up and pop it in the fridge for just one hour. When it’s chilled, split it in half and get ready to roll (literally!). Dust a parchment-lined surface with some powdered sugar and roll out a rectangle of dough that’s about ¼ inch thick. You gotta work quickly here, so your dough doesn’t crumble on you! Spread half of the peanut butter on that rolled-out dough, then start rolling it up into a tight log, using the parchment paper to help you out. Wrap that log up in parchment paper and pop it back in the fridge for another hour. Repeat the whole process with the other half of the dough. When you’re ready, slice those logs into about ½-inch pieces and enjoy!

Now that you’ve devoured half of your potato candy (no judgments here!), it’s time to think about storing the rest. To keep your treats fresh for as long as possible, store them in an airtight container in the fridge. – just be sure to let them come to room temperature before serving. And remember, potato candy is best consumed within a few days of making, so be sure to share some with friends and family (or not, we won’t tell!).

Ingredients

  • 2 Russet potatoes to make ½ cup mashed potatoes (cooled)
  • ½ cup salted butter softened
  • 7 cups powdered sugar plus more for rolling
  • 2 teaspoons vanilla extract
  • 1 cup creamy peanut butter

Instructions

  • You need ½ cup of plain mashed potatoes.  Just peeled russet potatoes that you boiled and mashed until there was no lumps. 
  • In a large bowl using an electric mixer combine the mashed potatoes, butter, vanilla and one cup of powdered sugar until combined.
  • Add remaining powdered sugar, 1 cup at a time until all combined. The dough should not be sticky and should be like playdoh.
  • Cover and refrigerate the dough for just 1 hour.
  • Once the dough is chilled split it in half.
  • Dust your parchment lines surface with powdered sugar and roll out a rectangle about ¼ inch thick.
  • You want to work quickly so your dough doesn’t crumble.
  • Spread half of the peanut butter on the rolled out dough.
  • Starting with the longer side of your rectangle and using the parchment paper to help you roll the it in a tight log.
  • Wrap the log in parchment paper and refrigerate for another hour.
  • Repeat with the other half of the dough.
  • Slice the logs into about ½ pieces.
  • Serve!

Notes

Store leftovers in an airtight container in the fridge for up to 1 week.
You can always place your dough back in the fridge if it becomes hard to work with so it can stiffen up again.
