Ingredients for Overnight Chia Pudding
- watermelon
- chia seeds
- milk
- vanilla yogurt
- vanilla
- honey
- Watermelon juice
- Whipped Cream
How to Make Watermelon Overnight Chia Pudding
In a medium bowl, combine the Chia seeds, milk, vanilla yogurt, honey, and vanilla, and stir until pudding starts to thicken.
Place pudding in refrigerator. (If you choose to buy store bought already prepared melon, you’ll skip the next step to prepare the melon). Wash the melon by running cold water over it for a couple of minutes, turning it so that all sides are cleaned.
Dry with paper towels, and place the watermelon in a dish (such as a glass baking dish, 9 X13 with sides) before cutting: this will allow the juice to stay in the dish instead of running all over your counter. With a large sharp knife, cut the melon in two, and then in two again.
You should have 4 large pieces. You can cut the melon in small slices, or chop the melon in pieces, either way, is fine.
Remove the pudding from the refrigerator and add the watermelon juice to the pudding and stir well to blend. Add a piece, or slice of the watermelon to a small glass container, and place a generous amount of the pudding on top of the melon.
Add whipped cream to the top of the pudding, cover and place in the refrigerator to chill for about an hour. Place watermelon slices/pieces in a covered container, and refrigerate.
Just before serving the pudding, top with an additional slice/piece of watermelon. Enjoy!

- 1 small watermelon – or store-bought watermelon chunks or slices
- 1 cup chia seeds
- 1 cup milk almond, soy, or half and half
- 1 cup vanilla yogurt
- 1 teaspoon vanilla
- ¼ cup honey
- ½ cup Watermelon juice approximately ½ to ¾ cup – the amount will depend on how much juice melon extracts
- Whipped cream
- 8 – 10 small glass containers or containers of your choice
