Cheesy Chicken Spaghetti Casserole

Holy Cheese folks! This Cheesy Chicken Spaghetti recipe is one for the recipe books. It’s creamy, meaty and one that can hide vegetables!

I was first inspired to recreate the Chicken Tetrazzini recipe from Lil Luna. This Lil recipe has gone CRAY over on Facebook and I’m pretty sure as Pinterest as well. So congratulations to you Kristyn on this viral recipe {one of many of your recipes that’s gone viral!}.

However, while I loved Kristyn’s spin you know me — I like to create my own recipes that I know my family will enjoy!

How do you make chicken spaghetti?

This recipe is a great player at an event or family function that you are hosting. You literally throw it all together an hour before the guests arrive , letting it hang out in the oven.

The beauty about this recipe is that if it’s too dry, you can add more milk! Nobody will ever know…it’ll be our little secret!

Not to mention, this recipe freezes well, and it heats up like a dream for lunch the next day. 😉 To freeze, just place prepared servings into freezer-safe containers. Transfer them from the freezer to the refrigerator the night before you want to serve them. Reheat at 350 degrees until warmed through.

Now if you don’t have the Jeff Ruby’s Seasoning it’s totally ok. You don’t NEED it, but, I suggest purchasing it. If you’ve never been to Ruby’s Restaurant, you are missing out. They have the BEST steaks I’ve ever had, the best Mac & Cheese and the atmosphere is always stunning.

Cheesy Chicken Spaghetti Casserole

This Cheesy Chicken Spaghetti will please the crowd on a budget. As a leftover, this reheats great for lunch the following day!

Ingredients

  • 1 Can Cream of Mushroom Soup
  • 1 C Light Sour Cream
  • 1 ½ C Milk
  • 2 TBSP Garlic minced
  • 1 TSP Parsley Chopped
  • 2 TSP Dried Chives
  • ½-3/4 C Water from noodles
  • 2 Boneless Skinless Chicken Breasts cooked & diced
  • 1 bag of frozen corn or any vegetable
  • Garlic Salt & Pepper to taste
  • 2 TBSP Jeff Ruby's Steak Seasoning *optional
  • 1 Box Barilla Noodles cooked (any long strand will do)
  • 16 oz. Block Colby Jack Cheese shredded (any cheese will do)

Instructions

  • Boil noodles according to box, drain.
  • In a large bowl mix together cream of mushroom soup, sour cream, milk, garlic, parsley and chives.
  • Add chicken to noodles in a large baking dish and pour milk mixture, coating every noodle.
  • Spread shredded cheese over the top and cover with aluminum foil.
  • Bake in the oven for 30-45 minutes until warm, cheese is melted and bubbly.
  • Remove the foil and allow to cook for another 10-15 minutes until cheese is golden brown.
  • Remove from oven and allow to cool approximately 10 minutes prior to serving.
