Crumble Topped Rhubarb Pie

Ingredients

  • One 9 inch prepared pie shell

Filling:

  • 1 cup sugar
  • 2 tbsp. flour
  • 1 egg
  • ½ tsp. vanilla
  • 2 cups rhubarb cut up

Topping:

  • ¾ cups flour
  • ½ cup brown sugar
  • ½ cup rolled oats
  • cup butter

Instructions

  • Preheat oven to 350 F.
  • Beat together sugar, 2 tbsp. flour, egg and vanilla.
  • Stir in the cut up rhubarb.
  • Pour into unbaked pie shell.
  • In a small bowl, mix together the flour and brown sugar. Add the butter and use a fork to blend the mixture into small crumbs.
  • Place pie on a baking sheet in case it bubbles over. Bake at 350 F for one hour, until the filling is bubbling and the topping is golden brown.
  • Let the pie cool before slicing. Serve as is or with vanilla ice cream or whipping cream.
