Rhubarb Crumble Pie

Crumble Topped Rhubarb Pie
Ingredients
- One 9 inch prepared pie shell
Filling:
- 1 cup sugar
- 2 tbsp. flour
- 1 egg
- ½ tsp. vanilla
- 2 cups rhubarb cut up
Topping:
- ¾ cups flour
- ½ cup brown sugar
- ½ cup rolled oats
- ⅓ cup butter
Instructions
- Preheat oven to 350 F.
- Beat together sugar, 2 tbsp. flour, egg and vanilla.
- Stir in the cut up rhubarb.
- Pour into unbaked pie shell.
- In a small bowl, mix together the flour and brown sugar. Add the butter and use a fork to blend the mixture into small crumbs.
- Place pie on a baking sheet in case it bubbles over. Bake at 350 F for one hour, until the filling is bubbling and the topping is golden brown.
- Let the pie cool before slicing. Serve as is or with vanilla ice cream or whipping cream.
