How to Make Buckeye Balls
If you haven’t even had a Homemade Buckeye you are missing out. Let me show you how easy it is to create these expensive sweet snack in your own home.
Every time we visit Cracker Barrel my Husband insists on getting a few Buckeyes to take home. First, they are expensive. Not to mention they are huge. So being the good Wife that I am I decided to make Buckeyes! I’ve adapted a few recipes and have added a trick that I’ve taught myself to use with melting chocolate….paraffin wax.
Before you scrunch your nose, paraffin wax is perfectly safe and many professional bakers use it as well. I use the paraffin wax for two reasons. One, it helps to thin the chocolate out so that it is easier to work with. Two, the wax adds a glossiness that is otherwise lacking from plain old melted chocolate.
These Homemade Buckeyes that I have created have been super popular. Being a tight ass I made over 2,000 of these for our wedding. I’ve been told by the 120something guests that the buckeyes didn’t last for the Bride & Groom to arrive! I had placed three buckeyes in a drawstring bag & placed at each place setting as a favor…but, they never made it home.
Not to mention I have included them in our Christmas Cookies for the past 6 years. So these are expected amongst our friends and family. I’ve given the recipe out to several friends, but, I think they refuse to make them because they know I will.
I will tell you that you can make a batch of these. If you can’t contain yourself and have a good chance of binge eating these sweet treats you can freeze them! I use to have a batch on hand in my freezer, but, I was getting to fat for all that so that hasn’t been the case in a few years!
Ingredients
- ½ stick of household paraffin wax
- 12 oz. semi-sweet chocolate chips
- 2 sticks butter (softened)
- 3-31/2 C confectioners sugar
- 2 C peanut butter, creamy
**Each batch makes about 110 buckeyes.
Directions
- Line 2 cookie sheets with waxed paper.
- Melt butter in a large bowl.
- Add peanut butter and sugar to butter; stir.
- Using a teaspoon scoop up dough mixture. Using the palm of your hands shape into balls and then put on baking sheet. Place baking sheet with dough in freezer for 20 to 30 minutes.
- Melt paraffin and chocolate chips together on low heat in microwave. I prefer to do it with double boiler by putting water in a pan and placing a Pyrex bowl onto of the pan. If you do it this way, be sure that the water doesn’t actually touch the bowl or it will burn the chocolate.
- Take dough from the freezer and place a toothpick into the to of the ball. Dip ¾ of the ball into chocolate mixture. Put ball back onto waxed paper to cool and let the chocolate harden.
Once the buckeyes are made, you can place back into freezer to set. The Buckeye will harden and you can store in a Ziploc bag or container. You can store for up to 3 months in the freezer.
