This soup is a favorite at our house. It’s loaded with flavor, and so good even the pickiest of eaters will finish this bowl of soup. Since it is made in the Instant Pot, it tastes like a long-simmered soup but doesn’t take all day to make.

There are not too many ways to change up this soup. However, I have seen loaded potato soup with broccoli inside. It creates an additional flavor.

Ingredients for Loaded Instant Pot Potato Soup

white potato
sweet onions
celery

chicken broth
heavy cream
cheddar cheese
Parmesan cheese
white cheddar cheese
garlic salt

How to Make Loaded Instant Pot Potato Soup

Pour the chicken broth and heavy cream into the Instant Pot, and add the Potato’s, onions, celery, garlic, all cheeses, garlic salt, and pepper, and stir well. Place the lid on the Instant Pot until it beeps and locks. Make sure the Valve is set to sealing and press the ‘Soup’ setting on the Instant Pot. All the Instant Pot to automatically build and release the pressure. Once Soup is finished, Instant Pot will beep and go to keep warm. Make sure pressure valve is down, and remove the lid. Stir soup well to mix all ingredients. Put soup in bowls, and top with cheddar jack shredded cheese, chopped green onion and crumbled bacon. Serve with crusty bread or crackers for a delicious hearty meal. Enjoy!

Ingredients

  • 8 Large white potatos - peeled and cubed
  • 2 large sweet onions - peeled and chopped
  • 3 stalks of celery washed and sliced
  • 1 Tablespoon of minced garlic
  • 8 cups of chicken broth
  • ½ cup of heavy cream
  • ½ cup of shredded cheddar cheese
  • ½ cup of shredded Parmesan cheese
  • ¼ cup of shredded white cheddar cheese
  • 1 Tablespoon of coarse ground garlic salt
  • 1 Tablespoon of seasoned pepper
  • Shredded cheddar jack cheese - for topping
  • Chopped green onion - for topping
  • crumbled bacon - for topping

Instructions

  • Pour the chicken broth and heavy cream into the Instant Pot, and add the Potato's, onions, celery, garlic, all cheeses, garlic salt and pepper, and stir well.
