Want a low carb “chip” alternative? Try these ranch cucumber chips! It’s a simple and quick way to get your veggies in. I have been throwing out all the bad snacks in my pantry and wanted something crunchy so this satisfied my craving. Make sure to try our creamy cucumber salad and zesty italian cucumber salad too!

Crunch time! Let’s make some ridiculously easy ranch cucumber bites! First, peel that cucumber and slice it up into thin rounds. Next, toss ’em into a ziploc bag with some ranch seasoning.

Seal it up and shake, shake, shake until those cukes are evenly coated! Dump the whole shebang into a bowl and serve immediately. That’s it! Your snack game just leveled up.

Here are some more delicious ways to make low-carb cucumber snacks:

Cucumber and Smoked Salmon Rolls: Spread cream cheese on sliced cucumbers, layer with smoked salmon and roll up. Secure with a toothpick for a fancy snack.

Cucumber and Avocado Salad: Combine diced cucumbers, avocado, cherry tomatoes, and a sprinkle of feta cheese. Drizzle with olive oil and lemon juice.

Cucumber and Feta Stuffed Tomatoes: Hollow out cherry tomatoes and fill with a mixture of crumbled feta cheese, diced cucumbers, and fresh parsley.

Ranch Cucumber Chips

Ingredients

  • 1 English Cucumber
  • 1 TBSP Ranch seasoning or 1 ½ TBSP for a bigger cucumber

Instructions

  • Peel the cucumber and cut it in thin slices.
  • In a ziploc bag, dump the cucumbers and ranch seasoning. Shake until all coated.
  • Pour into a bowl and enjoy right away!

Notes

If you don’t want your cucumbers to “sweat,” toss your sliced cucumbers in salt, cover and allow to rest in the refrigerator for about 40 minutes. Pat dry with paper towel and add the ranch!
