Rocky Road Fudge

Ingredients

  • 2 ¼ cups semi-sweet chocolate chips
  • 1 14 oz can sweetened condensed milk
  • 3 cups mini marshmallows
  • 1 cup peanuts
  • ½ tsp vanilla extract

Instructions

  • In a 9×10 inch pan, line it with parchment paper, lightly greasing it. Make sure the edges go up over the sides for an easy way to lift out later.
  • In a microwave safe bowl, add the condensed milk and chocolate chips. Stir.
  • Microwave for 30 seconds then stir. Repeat until all melted and smooth.
  • Add the marshmallows and peanuts and stir. Keep in mind that really hot chocolate can melt marshmallows. It will still taste good, but there will be more marshmallow swirls.
  • Pour into the lined pan.
  • Let cool and firm up for about 2 hours at room temperature or an hour in the fridge.
  • Lift the parchment paper out of the pan, then cut into pieces.
