Ingredients

  • 1 pound about 4 cups frozen tater tots
  • 8 large eggs
  • ½ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika
  • 1 cup shredded cheddar cheese divided
  • ½ cup diced bell peppers any color
  • ½ cup diced onion
  • ½ cup diced cooked ham and/or bacon optional for meat lovers
  • Fresh parsley for garnish optional

Instructions

  • Preheat the oven to 375°F. Grease a 9×13-inch baking dish with cooking spray or butter.
  • Spread the frozen tater tots in an even layer in the bottom of the prepared baking dish.
  • In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and paprika until well combined.
  • Stir in ½ cup of the shredded cheddar cheese, diced bell peppers, and diced onion. Mix until all ingredients are evenly distributed.
  • Pour the egg mixture over the tater tots in the baking dish, ensuring even coverage.
  • Top with the diced ham or bacon (if using) and add the remaining shredded cheddar cheese over the top of the casserole.
  • Cover the baking dish with aluminum foil and bake for 25-30 minutes. This will allow the eggs to set.
  • After 25-30 minutes, remove the foil and continue baking for an additional 10-15 minutes or until the top is golden brown, and the casserole is firm in the center.
  • Once done, remove the casserole from the oven and let it cool for a few minutes.
