Healthier Fried Rice

This healthier fried rice recipe makes an easy, healthy lunch! It’s a great way to consume veggies and add in brown rice. The others in my family won’t eat the brown rice {I have no clue why!} so when I am needing something just for myself, skinny fried rice gets created in my kitchen!

I may have a slight obsession with Teriyaki sauce. I don’t know what it is about it, but, I have a love for it! You can literally sprinkle teriyaki in anything and your dish is almost guaranteed to turn out tasting great.

I use teriyaki sauce when I am cooking steak, burgers, making a stir fry, on chicken sandwiches and (obviously) in rice, just to name a few.

Healthier Fried Rice

This healthier fried rice is packed full of nutrients and is a great recipe to make on Sunday and nibble on throughout the week. If you go to reheat and the rice is a little dry just add a little bit of water and mix around until it’s just right!

Ingredient Substitutions for Vegetable Fried Rice Recipe

On the day I shot these pictures I ran out of brown rice and had to add in white rice 🙁

You can also make this vegetable fried rice recipe using white rice if you don’t care for the brown. Also, if you don’t like a veggie, no worries just leave it out! I’ve made this in more ways than I can count. If I have cherry tomatoes on hand I’ll add a few in at the end. The tomatoes add a pretty color…hey they say you eat with your eyes first and as I age I totally believe that now!

Healthier Fried Rice

Healthier Fried Rice is a simple and easy side dish that helps you get those veggies and whole grains in your diet in a delicious way!

Ingredients

  • 1 C Brown Rice Cooked
  • ½ C Broccoli
  • 1 C Corn
  • 1 C Peas
  • 1 c Carrots
  • 1 tsp raw honey
  • ½ tsp pepper
  • 1 c water
  • ½ c teriyaki sauce
  • c soy sauce

Instructions

  • In a large skillet place all veggies and cook until heated, 5-7 minutes.
  • In a small bowl whisky honey, pepper, water, teriyaki and soy sauce, pour into veggie mixture.
  • Heat through.
  • Add in cooked rice to veggie mixture and mix.
  • Serve in a pretty bowl and enjoy with or without a egg roll!
