This Foiled Potatoes Side dish is a crowd pleasing Potato and Onion Recipe that is super easy to put together, can be made in the oven or over the fire…and clean up is a breeze!
These Foiled Potatoes are one that my Husband has been eating for as long as he can remember. You see when he was little he would go hiking, ride dirt bikes and camp out with his friends. They had to get a little creative along the way as far as food went.
One day, much to my surprise!, he made this potato and onion recipe. I was pleasantly taken back by how delicious they were. Not to mention they were super simple to create. This potato and onion recipe is great for feeding a crowd on a budget.
You can simply add all the ingredients on the pan and bake in the oven for about 30-40 minutes depending on how big you make the potato pieces.
Now, I will say that I have added green and red peppers to this potato recipe and they turned out all the better. I’ve also sprinkled on a packet of Ranch Dry Seasoning to these as well and there were none left. So feel free to add whatever you have on hand to these foiled potatoes, cook in the oven, on the grill or over a fire.
If you are filling extra daring you can place shredded cheese and sour cream over the top of these foiled potatoes for extra deliciousness!
On this particular day I served along side my famous Cinnamon Apples and some ham that we had left over from a previous dinner. Sometimes it’s the dinners that don’t have any fuss that end up being the best!
Now I will say that I make these WAY to much at camp! I will chop everything up, slap some butter or olive oil in the packet to ensure the ingredients don’t stick and then throw into the ashes of a hot fire. Now depending on how big the fire I leave them in for anywhere between 30-60 minutes if I’m making enough for 6. You will want to double that time if you are making more or subtract time if making less.
Now at camp we do have a 3 burner range that’s ran on propane as well as a oven. I also have a small 2 burner gas grill that I use A LOT along with a camper size refrigerator. I find that by cooking a lot of the recipes at home I am saving money on the propane {I never realized how much a camper would use!}

Foiled Potatoes – A Potato and Onion Recipe
Ingredients
- 4-6 Brown Potatoes cleaned and diced
- ½ yellow onion diced
- 3-4 cloves garlic minced
- 2-4 TBSP Olive oil
- 4 TBSP Butter
Instructions
- Preheat oven to 375.
- Place a large piece of foil down on a smooth surface.
- Pour olive oil so the entire bottom of the foil is coated.
- Toss potatoes, onions and garlic together on the pan until the olive oil coats all the ingredients.
- Sprinkle with salt and pepper.
- Add butter to the top of the potatoes.
- Cover with aluminum foil, ensure to tuck the two pieces together so no air can escape.
- Cook for 35-45 minutes until the potatoes are tender.

On the foil potato recipe, I add bite size slices of smoked sausage to mine!! Excellent!!!

Hi Jan! We have tried that too, but, the kids REFUSE to eat food that is touching….I don’t know what it is! YES! They are weird, I know. They also won’t eat cheese on their pizza 😉
