What ingredients do I need to make cheesecake bars?

  • Graham crackers
  • Sugar
  • Butter
  • Cream cheese 
  • Vanilla pudding mix
  • Powdered sugar
  • Milk
  • Vanilla extract
  • Blueberry pie filling
  • Heavy whipping cream (optional topping)

Blueberry Cheesecake Bars

Prep Time 15 minutes
Set Time/Cooling 4 hours 30 minutes
Total Time 4 hours 45 minutes
Servings 9

Ingredients

Crust

  • 18 whole graham cracker sheets
  • ¼ cup of sugar
  • 1 stick + 2 tbs of butter melted

Cheesecake filling

  • 2 blocks of full fat room temperature cream cheese 16oz
  • 1 packet of vanilla pudding mix
  • cup of powdered sugar
  • 1 cup of milk
  • 2 tsp of vanilla extract
  • 1 21 oz can of blueberry pie filling

Topping (optional)

  • Heaving whipping cream

Instructions

  • Crush the graham crackers in a ziplock bag with a rolling pin and add the sugar and melted butter.
  • In a lined 8×8 pan spoon in the graham cracker mixture. Smooth it out with the back of a spoon and place it into the fridge for 30 minutes.
  • Mix the cream cheese, pudding mix, powdered sugar, milk and vanilla extract in a large bowl. Start slow and mix for at least 2-3 minutes until everything is smooth.
  • Pour the cheesecake mixture over the graham cracker base
  • Pour the blueberry pie filling over the cheesecake mixture and place it back into the fridge for 4 hours. Overnight would be great too if you had the time
  • Top with heavy cream (optional)
