How to Make Cheesecake Bars

What ingredients do I need to make cheesecake bars?
- Graham crackers
- Sugar
- Butter
- Cream cheese
- Vanilla pudding mix
- Powdered sugar
- Milk
- Vanilla extract
- Blueberry pie filling
- Heavy whipping cream (optional topping)
You could also top with strawberry’s, raspberries, anything really! The possibilities are endless.
Blueberry Cheesecake Bars
Servings 9
Ingredients
Crust
- 18 whole graham cracker sheets
- ¼ cup of sugar
- 1 stick + 2 tbs of butter melted
Cheesecake filling
- 2 blocks of full fat room temperature cream cheese 16oz
- 1 packet of vanilla pudding mix
- ⅓ cup of powdered sugar
- 1 cup of milk
- 2 tsp of vanilla extract
- 1 21 oz can of blueberry pie filling
Topping (optional)
- Heaving whipping cream
Instructions
- Crush the graham crackers in a ziplock bag with a rolling pin and add the sugar and melted butter.
- In a lined 8×8 pan spoon in the graham cracker mixture. Smooth it out with the back of a spoon and place it into the fridge for 30 minutes.
- Mix the cream cheese, pudding mix, powdered sugar, milk and vanilla extract in a large bowl. Start slow and mix for at least 2-3 minutes until everything is smooth.
- Pour the cheesecake mixture over the graham cracker base
- Pour the blueberry pie filling over the cheesecake mixture and place it back into the fridge for 4 hours. Overnight would be great too if you had the time
- Top with heavy cream (optional)
