Have you ever had a pizza sandwich before? It’s really just a jazzed up grilled cheese…but, please don’t tell anyone. K?!
What is comfort food?
As a child, I don’t really remember eating grilled cheese. I remember eating spaghetti-o’s, but, not grilled cheese. In fact, my kids really won’t even eat a grilled cheese {nor will they eat eggs!} and I’ve really been trying to change that. I feel like when I think of comfort food, grilled cheese and a bowl of tomato soup instantly come to mind.

Anyhow, my kids will eat bacon. So I created my BELT Sandwich Recipe. Basically, it’s Bacon, Egg, Lettuce, and Tomato and it’s grilled! So then I realized that my kids sorta ate that and needed to come up with another version! That’s where this Pizza Sandwich comes in.
Now, again, my kids are weirdos…they remove the cheese from a pizza. I know, can you believe that? Also, when it comes to pizza, they don’t really care for white sauce, they’d rather it be plain or an olive oil based sauce.
What I did is ended up combining the way they eat their pizza into a pizza sandwich! Now they will eat spinach and “sprinkle” mozzarella cheese. (Also, FWIW my kids think that spinach is basil because we have herbs out back and if they pick it for me, they’ll eat it! Now I need to come up with a way to grow spinach and not have the squirrels dig it up…)
And YES, you can now say my kids are picky eaters. But, I don’t think they are your typical picky eaters…anywayz.
They LOVED this Grilled Margherita Pizza Sandwich. Beanies mentioned that if I added bacon to it next time that this new pizza sandwich would be her new favorite thing to make and to eat! Needless to say, bacon will be added next time…because well, bacon makes everything better, RIGHT!?
Just like all of my recipes, this is one that can be adapted to your family’s taste buds. You can totally add basil to this instead of spinach. You can also add in a red onion should you dare or possibly even sprinkle some minced garlic on this bad boy! I think that may force me to make an adaptation of this Pizza Sandwich. I mean we could be here all day doing this!
