This Mini Blueberry Pies recipe is not only both of those, but, it’s one of those dessert recipes that will fool your guests as they will think you were in the kitchen all afternoon, but, in reality, you were in less than the time it takes to make cookies!

INGREDIENTS

  • Ready-made pie crust (to make this pie extra quick, you can also opt for the ready-made pie crust that’s already in mini-pie sizes)
  • Flour for rolling
  • 2 cups frozen blueberries, thawed
  • 1 tsp cornstarch
  • ¼ cup sugar
  • Juice of one lemon
  • 2 tbsp butter

HOW TO MAKE MINI BLUEBERRY PIES

Preheat oven to 375 degrees.

Tip: If you decide to make your own mini-pie shapes. However, this is the easy version!

Step #1: on a surface covered with flour, roll out your store bought pie crust.

Step #2: Cut out 2-inch circles (with a cookie cutter) of the rolled-out dough and place each pie circle in a muffin tin.

Step #3: In a medium-sized bowl, mix blueberries, cornstarch, sugar, and lemon.

Step #4: Fill each pie crust with your blueberry mixture and dot it with butter.

Step #5: Bake for about 15 to 18 minutes or until pie crust is golden.

Tip: Be sure the pies are cool and set before taking them out of the muffin tin.

VARIATIONS TO MINI PIES:

  1. Use any fresh or frozen fruit.
  2. Simply use the 3 cups of fruit and make a compote with the sugar.
  3. If you have leftover dough, use a cookie cutter and place on top, for a cute decoration to your mini pies.
  4. Limited on time? Use your favorite store bought pie filling in place of the blueberries and sugar mixture.
