Even people like my Husband, y non-mushroom lovers LOVE these Easy Stuffed Mushrooms! Juicy and meaty on the outside, while creamy and full of flavor on the inside, WITH LOW CARB options!
Over the time I’ve had MyHeavenlyRecipes.com I’ve mentioned that recipes are meant as a base. If you don’t like onions and they are in my Chili Recipe, leave them out. Perhaps you don’t care for tomatoes, leave them out of these Stuffed Mushrooms and then simply add in the flavors that you do love!
I will tell you that this particular Stuffed Mushrooms Recipe comes from my friend Krystal. {Hey girl hey!} She brought these to camp one weekend and I fell in love! I fell in love not only because they are HEAVENLY, but, because they were seriously so simple to put together and cook…I mean if we made them at camp, they had to be easy!
Now if you’ve been a part of the site for a while, you may also know that I have a picky Husband. Like he won’t even eat Beef Stroganoff or any of my leftover Penn Station, because it ALWAYS has mushrooms on it. In fact, nobody in my family will eat mushrooms, besides me. So when I have the opportunity to eat mushrooms, I take it!
However, I would like to tell you that every time we have made these this stuffed mushrooms recipe, Jas has eaten them! I’m not sure if it’s because I added bacon to it…I mean who can turn down bacon? He actually enjoys them and doesn’t want to tell me, or because he was hungry!! But, either way I’ll take it!
Tips for the perfect stuffed mushrooms
- Grab the “stuffer mushrooms” available in Baby Portabella so there’s no cleaning involved!
- White or brown mushrooms can be used in this recipe.
- Wash the mushrooms with a damp paper towel. Then pat dry with a dry paper towel.
- Once you have them all stuffed, use a baking sheet or dish with sides so any liquid released does not get leaked in your oven.
- Make sure they are in a single layer, NOT piled on top of each other when they go in the oven. You want them to cook evenly.

- chopped basil (the squirrels at my basil plant in my container on the deck)

- ground sausage
- cream cheese
- bread crumbs

how to make easy stuffed mushrooms
Ingredients
8 Baby Portabella Mushrooms, cleaned and stem removed
1 C Bacon, Cooked and Chopped
½ Roma or Grape Tomatoes, diced
Feta Cheese
Olive Oil
Instructions
Preheat oven to 350 degrees.
Place mushrooms in baking dish and top with bacon, tomatoes and feta cheese.
Drizzle with olive oil.
Place in oven for 15-20 minutes.
Enjoy!
