Watermelon Whoopie Pies
Nothing says summer like watermelon! Carry the theme of sweet, summer watermelon through your entire picnic with this cute dessert idea. Whoopie pies are a classic dessert. Moist cake and creamy frosting, finished with fun colors and “seeds” on top, what’s not to love?
Whoopie pies are traditionally thought of as chocolate cake with vanilla frosting sandwiched inside, but I take it a step further with fun colors to represent watermelon. Green rinds on the bottom, red fruit on top – add some quick “seeds” with a toothpick dipped in black coloring and you are all set for fun! Kids will love to be in the kitchen with you, adding dye to make the perfect watermelon colors.
What makes whoopie pies so great?
- You can customize your colors and filling flavors to imitate lots of other desserts and occasions.
- They are easy for kids to help with. You could draw circles on the underside of your parchment paper so they can easily make the cakes the right size. (This might even help grownups, right?)
- Easy to make ahead. You don’t need to save these to last minute. Make them the night before so you are all set for your picnic lunch, no matter where you might be. These will pack easily in a small container in your cooler.
- Use whoopie pies “glued” to cardboard in designs like cupcake cakes you see at the store. Fresh ingredients and fun shapes, without the cost of the bakery.
Whoopie Pie Ingredients
For the cakes
1 stick butter, softened
¾ cup granulated sugar
1 large egg
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
Pinch of salt
⅔ cup buttermilk
1 drop violet gel food coloring
3 drops red gel food coloring
3 drops Kelly green gel food coloring
Black frosting, for decorating
For the filling
1 sticks butter, softened
2 cups confectioners’ sugar
2 tbsp milk
2 tsp vanilla extract
How to Bake and Assemble
Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
With an electric mixer, start beating your butter, sugar, egg, and vanilla on medium speed. Gradually increase to high until creamy.
In a medium-sized bowl, sift together all of your dry ingredients. In thirds, add them to your wet ingredients, alternating with the buttermilk.
Once all of the ingredients are thoroughly combined, divide the batter into 2 bowls. Color each one – one bowl of batter will be the red and purple, the other green.
Use frosting bags to pipe each colored batter onto your lined baking sheet, about 2 inches in diameter. Bake for 10 to 12 minutes and allow to cool completely on a wire rack.
Prepare your buttercream by beating butter, sugar, milk, and vanilla on medium speed. Gradually increase the speed to high. The buttercream is ready once it forms stiff peaks.
Assemble by spreading the buttercream on the bottom of one green cake. Sandwich the buttercream by placing a pink cake on top. Decorate with black frosting by drawing out “watermelon seeds” on the pink side of the whoopie pie.
