This is a delicious smoothie, full of healthy ingredients, that are as good as they are pretty to look at.  This makes a dramatic presentation to serve guests for breakfast, or brunch.  It’s a great way to enjoy some fruit all swirled up in a great drink.

Variations to Peach Smoothie

The great thing about a smoothie is that you can add whatever fruit you like. You can create additional layers with other fruits.

Ingredients in Layered Peach Smoothie with Dragon Fruit

  • Dragon-fruit
  • peaches
  • Chia seeds
  • vanilla yogurt
  • milk (almond or soy)
  • vanilla syrup
  • crushed ice

How to Make Layered Peach Smoothie with Dragon Fruit

Wash the Dragon-fruit, and with a sharp knife, slice it in half.  Scoop out the fruit with a spoon, and place it in a blender with 1 Tablespoon of Chia seeds, ½ of the container of vanilla yogurt, and 1 teaspoon of vanilla syrup. 

Blend on high to mix ingredients, and stop and add about 2 teaspoons of crushed ice.  Blend again on Frappe setting, or liquefy setting.  Remove blender pitcher, and scrape down sides and stir into mixture.  Pour dragon-fruit mixture evenly in glasses, filling them about ⅔ full, and place them in the refrigerator.

Rinse blender pitcher, and remove all water.  Slice the peaches in half, remove the pit, and with a spoon, scoop peach fruit out and place in blender. 

Blend with 1 Tablespoon of Chia seeds, 1 cup of milk, 1 teaspoon of vanilla syrup, and the remaining vanilla yogurt, until smooth and creamy. 

Remove glasses from the refrigerator, and pour peach smoothie mixture on top of Dragon-fruit smoothie. 

Garnish glasses with a slice of peach, and a piece of dragon-fruit.  Serve immediately.  Enjoy!
