Chicken Bruschetta Pasta + Video

One of my Hubby’s favorite meals is the Chicken Bruschetta Pasta from TGI Friday’s. It can get costly for a serving at the restaurant, so why not make it at home for a fraction of the cost AND feed the entire family?!? C’mon in, I’ll show you how!

If you’ve been around MyHeavenlyRecipes.com you may have noticed our love for TGI Friday’s. Well, recently they tore down our beloved local Friday’s restaurant. It was where Beanies and I would go when we needed Mommy/Daughter time, it was where we would end up if the power was out and we were hungry {happens more times than I care to admit, we REALLY need a whole house generator!} and Jas and I ate their quite a bit life pre-kids! Now while the food is pretty tasty, our budget doesn’t allow us to go there with the entire family. We’d go broke. So, I’ve recreated several CopyCat Recipes of my own.

Those are a few of our favorites….I’m still looking for a Honey Mustard Recipe that’s similar to Friday’s. I just can’t get it. It’s either to sweet and runny or to mustardy and thick….I can’t get a happy medium. Now one of the times that Jas likes to hit up Friday’s is when they have their Pick 3 special. I’m not even sure they still run it anymore! But, you’d get a appetizer, dinner and dessert for like $11.99 or something. He’d always get the Chicken Bruschetta Pasta and Vanilla Bean Cheesecake, hands down. Being that I love to cook I just had to try and recreate this dish at home. I mean it is SUPER easy and it can’t really be screwed up. You’ve got chicken. Tomatoes. Olive Oil. Pasta. So let’s get cookin’!

Now that you have this recipe, what are you waiting for?!? It’s a great recipe to double or triple for a Sunday Dinner and it won’t break the bank. Have your guests bring Garlic Bread, Bruschetta, salad and a bottle or two of white wine. If there happens to be left overs this makes for a great lunch the next day!

Chicken Bruschetta Pasta

A quick and light Chicken Bruschetta Pasta recipe that can feed a family on a budget, without lacking flavor.

Ingredients

  • 2 Olive Oil
  • 3 Chicken Breasts
  • Garlic Salt
  • 2 Roma Tomatoes seeded and diced
  • ½ C Fresh Basil chopped
  • Pasta cooked and drained
  • Lawry's Lemon Pepper

Instructions

  • In a large pot boil noodles according to package, drain and plate.
  • In a large skillet season chicken breast with Lawry's Garlic Salt placing that side down. Ensuring to sprinkle top side of chicken breast with Garlic Salt as well.
  • Cook for 4-5 minutes on each side until golden brown and cooked through.
  • Dice tomatoes and place in small bowl with a drizzle of olive oil.
  • Drizzle plated noodles with olive oil and Lawry's Lemon Pepper seasoning to taste.
  • Plate chicken breasts on top of noodles and top with tomatoes.
  • Sprinkle fresh basil for freshness and enjoy!
