You guys these Rice Krispie Cupcakes are so terribly easy to make, there’s not a single reason NOT to make them!
My little TT girl gets to enjoy Rice Krispies treats as her Pre-School snack once or twice a month. I don’t purchase things like that at the grocery store, so, when she comes home ranting and raving about them I get that guilty Mom feeling. You know that feeling, right?!?
Anyways, I decided to make some Rice Krispies treats to surprise all the kids with after school one day. They had been REALLY good lately and felt like they needed a little reward and something to let them know I noticed how well behaved they had been.
When I make Rice Krispies treats, I typically make these Rainbow Rice Krispies Treats. All I do is basically add some sprinkles and call it a day!
But, I had some Whipped Buttercream Frosting left over from a sugar cookie cake I made, so decided to go ahead and use it. I think they turned out so freakin’ cute. The kids also loved them. I got screams when they finally saw their surprise! Then I got “You’re the best Mommy ever!” and my day was made!
There are just some moments that you remember from your childhood. Some of my best memories are of after-school snack time. I will have a story for you alongside a childhood recipe my brother created when we were like 12/13 years old! It’s one that has stuck with us and one that we make often for our own children.

How to make Rice Krispie Cupcakes (Recipe Video)

Rice Krispie Cupcakes
Ingredients
- 4 TBSP Butter melted
- 2 C Marshmallows
- 4 C Rice Krispies
Instructions
- In a large pot melt butter along with marshmallows. Stirring until melted and smooth.
- Remove from heat and stir in Rice Krispies until incorporated.
- Using a large cookie scoop place mixture into cupcake form and mold into a cupcake. Be careful not to burn yourself.
- Once the cupcakes have set and cooled place icing.
- Enjoy!
