As soon as the summer air turns into a crisp cool air, the leaves in my back yard begin to become beautiful and vibrant colors and campfires in the fire pit become the norm it’s time to break out these Chocolate Chip Pumpkin Bars!

Now. I will tell you there are times I’m a bit lazy. My S’more Cookie Bars were the result that 😉 While I *think* I want to make cookies, one of the littles have different plans and it’s time to get real. So I dump what was suppose to be a cookie into the pan and throw it in the oven for 20 minutes to bake…

That’s pretty much what happened on this day too! I was able to make the dough all by myself {consider that a miracle!} and then it was like all hell broke loose. TT and Bubby both saw the “chips” were out and wanted them….with zero patience involved. I was also trying to tape my FIRST EVER recipe video with my new tripod and was super excited about that! So I fed the littles some chips and finished the video. Once I popped the batter into the oven TT wanted Mommy to teach her letters and then Bubby was mad that I was holding her so he climbed up on the chair for me to hold him too!

But, this is what my life is about. Managing my home, snuggling my children and trying to make myself content by creating recipes for you! See how the circle works?!?

Anyways…

Now I will tell you that this recipe is a bit of a cookie, a bit of Banana Bread, dense like a cake & pumpkiny {I’m pretty sure that’s not a word!} and you get the sweetness from semi-sweet morsels. Then you’ve also got a bit of the oatmeal and cinnamon which is just comfort food all by itself! There’s really no reason why you shouldn’t make these Chocolate Chip Oatmeal Pumpkin Bars this weekend. It’s a tad easier than making my Pumpkin Roll recipe….why is it that the Pumpkin Roll is intimidating? Ingredients

  • 4 TBSP Unsalted Butter, room temp
  • ¼ C Light Brown Sugar
  • ¼ C Honey
  • ¾ C Pumpkin
  • 1 ½ C Old Fashion Oats
  • 1 C Whole Wheat Flour (All Purpose works too)
  • 1 TSP Baking Soda
  • 1 TSP Ground Cinnamon
  • ¼ TSP Nutmeg
  • ½ TSP Salt
  • ½ C Chocolate Chips

Instructions

  1. In a large bowl mix butter, brown sugar and honey.
  2. Add in pure pumpkin and stir.
  3. Next mix in oats and flour.
  4. Add in baking soda, cinnamon, nutmeg and salt, stir until mixed well.
  5. Stir in chocolate chips.
  6. In a 8×8 baking dish spray with non stick spray.
  7. Pour mixture into the pan and spread until even.
  8. In a preheated oven on 350 degrees bake for 20 minutes.
  9. Remove from oven and let cool.

Ingredients

  • In a preheated oven on 350 degrees bake for 20 minutes.
  • Remove from oven and let cool.
  • Sprinkle with powdered sugar and cut with a sharp knife to serve.
