Have you ever had a girl crush? Over the last year, through a mutual friend, I’ve watched this amazing chick named Sarah (hey girl hey), create some AMAZING pieces. She’s a baker and she’s like over the top talented at what she does. I’ve tried to get some cupcake, or cakes made, but, this girl is on fire {you are totally singing that Alicia Keys song}. She’s booked for months and I have tried and tried and tried.

BUT, all is not lost, because she is sharing these over the top Unicorn Cupcakes with us today!!!!

How to Make Unicorn Ice Cream Cone Cupcakes – Video Tutorial

HOW TO MAKE UNICORN CUPCAKES – Step by Step

First, you’ll want to make sure you have all of the ingredients on hand. Here’s what you’ll need:

Step #1: In a large bowl, mix together the funfetti cake mix, according to recipe on box.

Step #2: Using a large cookie scoop, very carefully fill the ice cream cone with cake mix. Repeat until cake mix is used.

TIP: Place ice cream cone, upside down (with the cone bottom end up), onto the cake batter.

Step #3: Bake a 325° for 8-10 minutes. The cake should be cooked through and your ice cream cone should not change in color. Check with a cake releaser or toothpick, should come out clean.

TIP: Place oven rack on very bottom of the oven.

Step #4: While unicorn cupcakes are cooking, make the Whipped Buttercream Icing.

TIP: DO NOT remove cupcake liner until cupcakes have allowed to cool for 10-15 minutes. Removing while still warm, will result in a crumbly cupcake.

Step #5: Separate icing equally into three bowl: blue, pink, purple, mix.

Step #6: Place each color in a single row into the end of your decorating bag that’s set with a large tip. If you need a visual check out this video.

Step #7: Using a large piping tip, swirl icing onto top of each cupcake.

Step #8: Top cupcake with Unicorn Horn. You can use making fondant or buy pre-made unicorn toppers.

You can very easily make this with white fondant.

You can also spray with edible shimmer spray to give the horn a fun look!

Step #9: Draw on eyelashes with black icing.

Unicorn Cupcakes in a Cone

Anything unicorn is all the rage right now! Whether you are looking to brighten someone's day, celebrating a special person in your life or just want to have some fun in the kitchen, these Unicorn Cupcakes are sure to be the highlight of your day!

Ingredients

  • 1 Funfetti Cake Mix made according to box
  • black icing for eyes
  • Whipped Buttercream Icing
  • 24 Ice Cream Cones
  • Pink, Blue and Purple Food Coloring

Instructions

  • In a large bowl, mix together the funfetti cake mix, according to recipe on box.
  • Place Ice Cream Cone into muffin tin.
  • Using a cookie scoop, very carefully fill the ice cream cone with cake mix until about ¾ the way full. Repeat until cake mix is used.
  • Bake a 325° for 13-15 minutes. The cake should be cooked through. Check with a cake releaser or toothpick, should come out clean.
  • While unicorn cupcakes are cooling, make the Whipped Buttercream Icing.
  • Separate icing equally into three bowl: blue, pink, purple, mix.
  • Place each color in a single row into the end of your decorating bag that’s set with a large tip. If you need a visual check out this video.

  2. Hi! I’d like to make these for my daughter’s birthday but I’m a novice baker. A couple questions: Recipe says 24 ice cream comes, does one cake mix box make 12 or 24? Also above there is a tip about turning the ice cream cone upside down onto the batter. I am not sure if I understand what that means. Could you clarify? Thank you!

  3. Hi Maria. One box of mix will make about 6 cupcake cones. What we do is fill the cupcake all the way up and leave about a 1/4″ from the top so it can rise. The height then comes from the icing. That is the easiest way that I have found to do it. A couple readers have done it where you bake the cupcake down and trim it to fit the cone, but, I don’t have time for all that!!!! Let me know how it turns out.
